Blue Apron ~ Smoked Trout and Asparagus Salad

I was really looking forward to this Smoked Trout and Asparagus Salad with fingerling potatoes and garlic croutons.  I was not disappointed.  

I loved smoked fish, and this smoked trout was delicious.  The salad was made with boiled fingerling potatoes and vegetables.  The vegetables ~ asparagus and red onion ~ were sautéed in a pickled mustard seed dressing that was made by boiling the mustard seeds with vinegar and a tad of sugar.  The dressing went well with the smoky fish.

Definitely a favorite hardy salad.

Blue Apron ~ Chicken Paillard

This dish was made using the French technique of pounding, called "paillard" the chicken into a thin piece for quick cooking.  The chicken was served a potato and fennel combination with a touch of lemon.  Before serving, the chicken was topped with an olive, garlic and butter sauce.  The meal was good, but not one of my favorites.

Blue Apron ~ Pan-Seared Chicken

Tonight I made Pan-Seared Chicken with Roasted Honeynut Squash and Apple.  I would never have thought to combine and roast squash, apples, potato and shallot together.  It was delicious.  Today was the first real "Fall" day we have had, so this meal of autumn vegetable was just perfect.  The chicken was topped with a toasted almonds, sage and butter sauce.  I liked the crunch of the almonds, but the sage was a bit too strong.

Blue Apron ~ Cornmeal-Crusted Catfish

This dish taught me how to make corn-meal crusted fish, which is actually so easy, but something I had never tried before.  Not only was it easy, but it was very tasty, too!  The corn-meal coating was mixed with a peppery mustard, giving it a perfect crunchy and flavorful crust.

The meal came with the fixings for creamy potatoes ~ fingerling potatoes served in a creamy remoulade sauce, which was also very easy to make, and a cucumber-tomato salad.  The salad was good, but the next time I would make it with less onion.  There was enough of the remoulade sauce left over for dipping onto the catfish.

Blue Apron ~ Seared Steaks and Mashed Potatoes

This dish was not a winner.  I followed the instructions for cooking the steak, but it didn't turn out the way I think it should have.

The sautéed radishes and snap peas, on the other hand, were delicious.  I would definitely make them again.  Sautéing the radishes toned down their peppery bite, giving them a marvelous texture and flavor.
